Did I get your attention? :) This often requested dish of Diana's can be described as a Thai Chicken Cole Slaw that can be enjoyed from a bowl or clothed in a spring roll wrap.
The Naked Spring Roll:
Lite Soy Sauce- 6 Tablespoons
Rice Wine Vinegar- 6 Tablespoons
Juice of 1/2 Lemon or Lime
Equal- 1 packet
Now there is a choice to be made:
Mix in 1 Tablespoon Sriracha Hot Chili Sauce (Add more or less to taste.)
OR
1 Tablespoon Sesame Oil
Rice Wine Vinegar- 6 Tablespoons
Juice of 1/2 Lemon or Lime
Equal- 1 packet
Now there is a choice to be made:

OR

Toss together:
Fresh Cole Slaw- about 1/2 bag
Handful of Fresh Mint or Cilantro- chopped
Put 2-3 Cooked Chicken Breasts (cut into bite sized pieces) on top, then add dressing and toss until coated evenly. Enjoy!
Some variations:
If you are not the Naked Spring Roll type, wrap the mix in rice paper.
Nutty & Naked Spring Roll: Add 1/4 cup chopped peanuts.
The Naked Spring Roll requires lots of crunching, munching and chewing - don't worry it's worth it! This is definitely a Dish 2 Di-et 4! It feels like you are burning more calories eating than are even in it. Can't wait to hear what you think! :)
