Shrimp Salad with Friends' Favorite Dressing

Are you ready for another Dish 2 Di-et 4? 

Here is the recipe for Diana's most requested dressing: 

Friends' Favorite Dressing
Fat-Free Mayo- 8 Tablespoons
Vinegar- 4 Tablespoons
Dijon Mustard- 1 Tablespoon
Equal- 2 packets
Garlic Powder- a pinch or 2

Put all of the above ingredients in a small pitcher and mix for a few seconds with a hand blender.  You end up with about 3/4 cup of dressing.  If you personally used all of that on your salad it would be less than 100 calories!  (That would have to be one BIG salad!)

Di often uses this dressing for her Fabulous Shrimp Salad:

Start with a bag of Mixed Greens
and arrange more or less depending on your preference, the following:

Cooked Shrimp (cut into bite sized pieces)- 1 1/2 cups
Hearts of Palm (cut into bite sized pieces)- 1/2 cup
Roaster Red Pepper from the jar (cut into thin strips)- 1/3 cup
Avocado (sliced)- 1
Grape or Cherry Tomatoes (cut in half)- 1/2 cup

Top with Friends' Favorite Dressing and start munching! :)
