"I love to concoct things." ~ Di

What can I tell you about Di?  Hmmm...let's see...Diana is a true friend, a great wife and mom to 4 fabulous dogs, beautiful on the inside and out, she's tons of fun and she loves to dish.  She dishes hilarious stories and amazingly delicious food that's healthy!  You always feel better after talking with Diana and healthier after eating her yummy dishes.

Diana loves to share her love of "good for you" food with us and rattles off her recipes quickly.  Soon we are on to another topic and we are lost wishing we knew how to make that low-cal meal she shared.  After many times of asking Di to sit still and write down her recipes, she confessed that she would probably never do it.  Instead she had invited us over to see her cook in action.  Angelica and I watched as she demonstrated her wild cooking style.  Di doesn't measure or use recipes, she just chats and plays with the food and there it is! While we munched away, I took notes and attempted to put her dishes on paper.

This is the beginning of Di's Dishes 2 Di-et 4. 


Cajun Fettucine Alfredo ~ 2 Di-et 4

Heat in a small saucepan:

Fat Free Cream Cheese- 2 ounces
Johnny's Garlic Spread & Seasoning- 1/2 Tablespoon  (Di gets it in the big jar at Costco)
I Can't Believe It's Not Butter- 1 Tablespoon
Fat Free Milk- 2 Tablespoons
Hot Wing Sauce- 4 Tablespoons (Start with less and keep going until it has enough kick.)

8 oz. Tofu Shirataka Fettucine Noodles - Di used House Foods brand (rinsed - parboiled if desired)
         
Mix the noodles in with the sauce and enjoy! 

Taking notes while Diana is talking, laughing and cooking is a challenge.  She is way too entertaining and gives too many dish variations to record.  Here are a few:

~If you prefer a more traditional alfredo, skip the hot sauce - it's still really good. 
~Add some cooked shrimp, chicken, sundried tomatoes or bacon bits to the sauce. 
~FYI:  There are only 40 calories in the whole package of the tofu noodles!
